This semi-soft cow’s milk cheese is born in the prolific alpine valleys of Italy’s Piedmont region from the hands of shepherds and cheese makers with deep familial roots. Each pudgy wheel is packed with hints of soft nuts, wild herbs and fresh grasses, and named for and aged in a lower-altitude bunker with a rich gastronomic historyof its own.
